Zucchini Bread

 
Zucchini Bread  (kolokithopsomo)

My adult son, who doesn't eat any desserts as a rule, loves this bread.

Ingredients:
3 eggs
1 c olive oil
2 ½ cups sugar or honey (I used about 1 ¼ c sugar and 1 cup honey)
2 cups raw unpeeled zucchini, grated
2 tsp cinnamon
1 tsp salt
1 tsp baking soda
½ tsp baking powder
3 c. flour
1 c walnuts, chopped

Directions:
Preheat oven to 350.

In a large bowl, beat eggs until foamy; gradually beat in oil and sugar or honey.  
Add grated zucchini, cinnamon and salt.   
Mix the baking soda and baking powder with the flour.   
Gradually add flour and blend well after each addition.  
Fold in the chopped walnuts.  
Pour into 2 breadpans and bake in preheated oven for 45 minutes to an hour until a knife inserted in the center comes out dry (I leave it a little moist).  Cool for 10 or 15 minutes, then turn out on a  rack to cool.

Enjoy!  Also tastes good with a touch of jam.
