Delicious Layered Apple Cake

 
Layered Apple Cake

I learned to make this recipe during a Family Education session when my children were in religious school.  The apples develop a creamy texture and the cinnamon makes the house smell so inviting.  I've had dozens of requests for this recipe!
Ingredients:

For the cake:
2 cups sugar
3 cups flour
1 tsp salt
3 tsp baking powder
1 cup oil
4 eggs
¼ cup fresh OJ
2 ½ tsp vanilla
2-3 apples peeled and sliced  (get an apple peeler/corer/slicer that you crank.  Cut the round apple     slices in half)

 For the topping:
2 Tbsp sugar
1 tsp cinnamon

1 – Preheat oven to 350 degrees.  Generously grease a 10” tube pan or bundt pan.

2 – In a small dish, mis 2 Tbsp sugar and 1 tsp cinnamon together and set aside.

3 – Beat together until smooth and thick, the 2 cups of sugar, oil, eggs, flour, salt, baking powder, OJ and vanilla.

4 – In the pan, pour a layer of batter, then place a layer of apples, then sprinkle some of the cinnamon and sugar mix.  Repeat layering pattern until all of the batter and apples are used.   Try to keep the apples in the center of the pan, so they don’t stick to the sides.

5 – Top with sugar and cinnamon mixture.

6 – Bake at 350 for 50-60 minutes, until a toothpick comes out dry.
