Butternut Squash Lentil Soup

The truth is, I was looking for a soup to make so I could try out my new immersion blender.  Even though this soup didn’t call for one, I used it … and it was mahhhvelous!   It changed the texture to creamy in an instant.  It’ll save me from having to pour soups into the Vitamix to blend.  

This recipe is good, and does include lots of protein and greens, but in terms of taste, I did make quite a few changes.  I doubled the herbs, added a little coriander, celery and a parsnip, and didn’t have enough lentils, so I subbed in some split green peas.  Probably used more salt than called for, and did use lemon at the end.

As written below, these changes are reflected.  It seems this is a recipe worth playing with - will try adding spices from other recipes to add to the depth.

This hearty butternut squash lentil soup is a comforting and nutrient dense superfood soup, featuring lentils, kale, and leeks.

Ingredients

SCALE
  • 3 garlic cloves
  • 3 carrots
  • 3 large leeks or 1 large yellow onion (or a combination; 1leek and 1 yellow onion works well)
  • (Optional - 1 celery, 1 parsnip)
  • 1 medium butternut squash (4 to 5 cups diced; use frozen diced as a time saver)
  • 1 bunch Tuscan kale or Swiss chard
  • 2 tablespoons olive oil
  • 1 teaspoon kosher salt - may need more
  • 8 cups vegetable stock (we used 6 cups broth and 2 water)
  • 1 1/2 cups brown or green lentils (if split green peas are used, cooking time will increase)
  • 2 teaspoons dried thyme
  • 2 teaspoons dried oregano
  • (2 tsp ground coriander)
  • Fresh ground pepper
  • 1 tablespoon lemon juice (optional) - improves the taste

Instructions

  1. Mince the garlic. Peel and chop the carrots into half moons.
  2. Chop the leeks (watch the video!): chop off the dark green stems and the bottom roots, then slice each in half length-wise. Place each leek half cut-side down on the cutting board, then chop it into thin half-moons. Rinse thoroughly in a colander to remove any dirt.
  3. Chop the butternut squash (watch the video!): Slice off the neck of the squash and peel it with a vegetable peeler. Peel the base. Slice the base in half and scoop out the seeds. Slice the neck into thin rectangles, then into long slices. Turn the slices the other way and dice. Cut the base into thin slices and then dice into small squares. 
  4. Wash and chop the kale (watch the video!). You can also wait to do this step while the soup simmers in Step 6.
  5. In a large pot over medium heat, heat the olive oil; add the leeks or onions and sauté until softened, about 4 to 5 minutes. Add carrots (optional celery and parsnip) and garlic and sauté for 3 to 4 minutes until softened.
  6. Add the squash, vegetable broth, lentils, thyme, oregano, and kosher salt, and bring to a boil. Reduce heat and simmer for about 20 minutes until the lentils and butternut squash are soft (taste test a few). In the last few minutes, add the chopped chard and simmer until tender. Add additional salt and pepper to taste. If desired, stir in the lemon juice.

Calabrian Chicken (or lentils), Pepper, Tomato and Potato Stew/ pollo in umido

This can be vegan, if lentils are used instead of chicken.

I used this recipe as a base, but added veggies and spices ad lib - including oregano, mushrooms, spinach, sweet potato, red onion … And then added various hot sauces to individual plates.  Brendon and Jessica’s favorite was a red curry sauce.  Like soup, this recipe is very  versatile and forgiving.

INGREDIENTS:  

1/4 cup EVOO

1 pound boneless chicken breast, cut into 2” cubes (or lentils)

1 large onion, roughly chopped (and red onion)

1 large red bell pepper, cut into 1” pieces

1 large green bell pepper, cut into 1” pieces (or 2 red peppers)

Optional veggies: string beans, mushrooms, spinach, sweet potato, red onion …

2 cloves garlic, minced

2 cups diced tomatoes (or more)

2 Tbsp finely chopped fresh flat-leaf parsley

2 Tbsp finely chopped fresh basil (or much more)

1/2 tsp sea salt

1/4 tsp freshly ground black pepper

1/4 tsp crushed red pepper, or to taste, with hot sauces as desired

2 Yukon gold potatoes, peeled, halved and cut into 1/4” rounds (and sweet potato)

DIRECTIONS:

1) Prepare lentils according to directions, or use TJ’s prepared lentils.  If using chicken, heat 3 Tbsp EVOO in a large, heavy-bottomed saucepan saucepan over medium heat.  Add the chicken and brown on all sides (or cook more fully - see step 3).  Remove from the skillet and set on a plate.

2) Add the remaining tablespoon of EVOO, onion, peppers and potatoes and sauté, stirring occasionally until light golden, 3-4 minutes.   At this time, also add other firm veggies you’re using (e.g. mushrooms,  string beans…).  Hold spinach until the end.

3) Add garlic and stir. Add tomatoes, salt, pepper and crushed red pepper.  The chicken can be added now, but I found that it dried out.  You can cook it fully to start, then add when the veggies are almost done.  Add small amounts of water at a time if the veggies don’t have enough liquid to cook in.   

4) Simmer for 20 minutes, covered, on medium-low heat.  Check every 10 minutes or so for doneness.

5) Would add spinach, if using, fresh basil and parsley toward the end. 

This dish can be made ahead, and often tastes better the next day.

Peanut Curry Lentil Soup

Another KindSoups delicious recipe.  I brought this one to a class I’m teaching on nutrition.  One of the women wasn’t sure she’d like lentils, but others encouraged her to try it.  I saw her a few minutes later and she said it was DELICIOUS, and said she took an extra serving to her apartment!  What a great nutritious boost! 

As always, I made some substitutions - just one can of coconut milk, mostly carrots instead of sweet potatoes because that’s what I had, and collard greens instead of kale.  All substituted so there was no food waste! 

INGREDIENTS:
    •  
    • 1/4 c olive oil
    • 3 med yellow onions, diced
    • 3 yellow peppers, diced
    • 1 head garlic, minced
    • 18 c vegetable broth
    • 3 3/4 lbs sweet potatoes, peeled and diced into ¾-inch cubes
    • 2 1/4 c brown lentils
    • 1/4 c Thai red curry paste
    • 3 15-oz can full-fat coconut milk
    • 6 c chopped fresh kale (I chopped pretty small) or spinach
    • 3/4 c creamy peanut butter
    • 6 limes, squeezed approx 3/4 c
    • sea salt and freshly-ground black pepper
    • 1 1/2 Tbls brown sugar to taste
    • chopped fresh cilantro and finely-chopped peanuts optional toppings

    Instructions

    • Heat oil in a large stockpot over medium-high heat. Add the onion and bell pepper and sauté for 5 minutes, stirring occasionally. Add the garlic and sauté for 1-2 minutes, stirring frequently, until fragrant.
    • Add the vegetable broth, sweet potatoes, lentils, curry paste and stir to combine. Continue cooking until the soup reaches a simmer. Then reduce heat to medium-low (or whatever temperature is needed to maintain a low simmer), cover, and cook for about 20 to 25 minutes or until both the lentils and sweet potatoes are tender.
    • Stir in the coconut milk, kale (or spinach), peanut butter and lime juice until completely combined. Taste and season the soup with salt (about 1 Tbsp to start) and pepper and a bit of brown sugar if, like me, you want to punch up the sweetness ever so slightly.
    • Serve warm, garnished with cilantro and chopped peanuts, if desired.

French lentil and arugula salad with herbed cashew cheese

Very good vegan main dish salad.  Love the ‘cheese’ even with making my own herbes de Provence, without the help of lavender.  

I listened to Guy Raz interview the founder of Food52 on How I Built This. She was a NYT food reporter and eventually founded this crowd-sourced food blog.  Then when I was searching for a good vegan main dish to accompany a Passover Seder, I learned that the conservative movement certified legumes to be ok several years ago.  Hence this perfect main dish, to be served alongside tsimmes and matzo kugel.  

French Lentil and Arugula Salad with Herbed Cashew Cheese

Delight in all of the familiar flavors and textures of a traditional French lentil and goat cheese salad—chewy lentils, creamy and tangy cheese—while also enjoying a recipe that's 100% dairy-free and vegan-friendly. The cashew cheese consistency should be somewhere in between a very thick hummus and a soft goat cheese—you'll know it when you see it. Add water gradually so that you can be sure to control the texture to your liking. 

Serves 4For the salad::

  • 1/3 cup olive oil
  • 1 small shallot, minced
  • 1 teaspoon salt
  • 2 tablespoons freshly squeezed lemon juice
  • 1 tablespoon Champagne vinegar
  • 1 teaspoon Dijon mustard
  • 2 1/2 cups cooked Le Puy green lentils, drained well
  • 2 cups firmly packed baby arugula leaves
  • 1 cup thinly sliced radishes
  • 1 cup chopped endive
  • 1 cup sliced cucumber
  • 1/4 cup chopped fresh dill
  • 1/3 cup toasted walnuts, chopped
  • 1 dash black pepper
  • 1/4 cup herbed cashew cheese (below)
  1. In a small bowl or measuring cup, whisk together the olive oil, shallot, salt, lemon juice, vinegar, and mustard until evenly blended.
  2. In a large bowl, stir together the lentils, arugula, radishes, endive, cucumber, and dill. Drizzle evenly with the dressing, then toss or stir until all the ingredients are evenly coated. Stir in the walnuts and season with black pepper to taste. Dot the top of the salad with small bits of the cashew cheese (about 1⁄2 teaspoon each).
  3. Serve salad right away, or store in an airtight container in the fridge for up to 3 days.

For the herbed cashew cheese::

  • 1 1/2 cup cashew pieces or a combination of cashews and pine nuts, soaked for at least 3 hours and drained
  • 2 tablespoons large flake nutritional yeast
  • 1 teaspoon salt
  • 2 teaspoons herbes de Provence
  • 1/4 teaspoon black pepper
  • 3 tablespoons freshly squeezed lemon juice
  • 1 clove garlic, minced
  • 4 tablespoons water, divided
  1. Put the cashews in a food processor or blender (preferably a high-speed blender). Add the nutritional yeast, salt, herbes de Provence, pepper, lemon juice, and garlic. Pulse a few times to break the cashews down until they have a wet, coarse, mealy texture.
  2. With the motor running, drizzle in 2 tablespoons of the water. Now it’s time for some kitchen intuition: Keep adding water, stopping occasionally to scrape down the sides of the work bowl, until the mixture has a good consistency. It should be similar to a thick hummus—a little coarse, but smooth and spreadable. You may not need all of the remaining 2 tablespoons of water. (If using a blender, start on a low speed and gradually increase to high speed as you add the water, using a plunger attachment the entire time to keep the mixture blending.)
  3. Taste and adjust the seasonings as desired. Stored in a covered container in the fridge, the cheese will keep for about 5 days

4/12/2020 - This recipe is good, but I tried another recipe recommended by cookie and kate that was even better than this one - check out acouplecooks.com - their lentil and butternut squash soup, which I'll add as a hearty lentil soup.

This simple vegan lentil soup recipe comes together quickly with mostly pantry ingredients. Be sure to have your ingredients prepped and ready before you start cooking! Recipe yields four large bowls of soup, or six more modest servings.
NOTE:  the lemon and salt, pepper are essential.

INGREDIENTS

  • ¼ cup extra virgin olive oil
  • 1 medium yellow or white onion, chopped
  • 2 carrots, peeled and chopped
  • 4 garlic cloves, pressed or minced
  • 2 teaspoons ground cumin
  • 1 teaspoon curry powder
  • ½ teaspoon dried thyme
  • 1 large can (28 ounces) diced tomatoes, lightly drained
  • 1 cup brown or green lentils, picked over and rinsed
  • 4 cups vegetable broth
  • 2 cups water
  • 1 teaspoon salt, more to taste
  • Pinch of red pepper flakes
  • Freshly ground black pepper, to taste
  • 1 cup chopped fresh collard greens or kale, tough ribs removed
  • 1 to 2 tablespoons lemon juice (½ to 1 medium lemon), to taste

INSTRUCTIONS

  1. Warm the olive oil in a large Dutch oven or pot over medium heat. One-fourth cup olive oil may seem like a lot, but it adds a lovely richness and heartiness to this nutritious soup.
  2. Once the oil is shimmering, add the chopped onion and carrot and cook, stirring often, until the onion has softened and is turning translucent, about 5 minutes.
  3. Add the garlic, cumin, curry powder and thyme. Cook until fragrant while stirring constantly, about 30 seconds. Pour in the drained diced tomatoes and cook for a few more minutes, stirring often, in order to enhance their flavor.
  4. Pour in the lentils, broth and the water. Add 1 teaspoon salt and a pinch of red pepper flakes. Season generously with freshly ground black pepper. Raise heat and bring the mixture to a boil, then partially cover the pot and reduce the heat to maintain a gentle simmer. Cook for 25 to 30 minutes, or until the lentils are tender but still hold their shape.
  5. Transfer 2 cups of the soup to a blender. Securely fasten the lid, protect your hand from steam with a tea towel placed over the lid, and purée the soup until smooth. Pour the puréed soup back into the pot. (Or, use an immersion blender to blend a portion of the soup.)
  6. Add the chopped greens and cook for 5 more minutes, or until the greens have softened to your liking. Remove the pot from the heat and stir in 1 tablespoon of lemon juice. Taste and season with more salt, pepper and/or lemon juice until the flavors really sing. For spicier soup, add another pinch or two of red pepper flakes.
  7. Serve while hot. Leftovers will keep well for about 4 days in the refrigerator, or can be frozen for several months (just defrost before serving).
