Lebanese Vegan Moussaka

Calling this a 'weeknight' recipe is a misnomer, unless you cook it on the weekend and heat it up on a weeknight.  BUT - all the time it took to make it is worth it.  The spice blend is delicious, really does take just a few minutes, and will likely be good on anything you choose to cover with it. 

3/2025 Used this spice blend to roast veggies and it was amazing - cauliflower, onions, white and sweet potatoes, red peppers, and fennel.  Tossed veggies with OO, S&P, then sprinkled this leftover spice blend. Roast for about 30 minutes total at 400 or so, tossing once in the middle.

A very simple version of the moussaka, which would not exactly be Lebanese or Greek, would be to just bake the eggplant slices, drain the chickpeas, and use a pre-made tomato sauce.  It still takes time because it would need to bake for 40 minutes or so after baking the eggplant and assembling the casserole, but it's still WAY faster than the recipe below.  My favorite store-bought sauce these days is Rao's.  It's more expensive than most others, but is relatively low in sodium, sugar and calories and has a short list of only natural ingredients.



This hearty casserole differs from the Greek version of moussaka in that it is a simple combination of eggplant, tomato sauce and chickpeas. In Lebanon, it is called maghmour. It uses a classic spice blend that gives it a unique flavor, but if you'd, like you can substitute another Middle Eastern blend, such as za'atar or baharat.

This recipe makes more spice blend than you'll need; it can be used on a wide variety of vegetables and in salad dressings, dips and more.

Make Ahead: The spice blend can be stored in an airtight container for up to 1 month.

SERVINGS:

Tested size: 8-10 servings

INGREDIENTS

FOR THE 7-SPICE BLEND
2 tablespoons plus 1 1/2 teaspoons ground allspice
2 tablespoons plus 1 1/2 teaspoons ground cloves
2 tablespoons freshly grated nutmeg
2 tablespoons ground fenugreek
2 tablespoons ground ginger
1 tablespoon plus 2 teaspoons freshly ground black pepper
1 tablespoon plus 2 teaspoons ground cinnamon
FOR THE EGGPLANT AND CHICKPEAS
3 1/2 cups cooked, no-salt-added chickpeas (from two 14-ounce cans), drained and rinsed
1/2 cup gluten-free flour blend (may substitute all-purpose flour)
1/2 teaspoon fine sea salt
2 large eggplants (about 3 pounds), trimmed and cut into 1/2-inch disks
2 tablespoons extra-virgin olive oil
FOR THE SAUCE
2 tablespoons extra-virgin olive oil
1 medium onion, finely chopped
4 cloves garlic, finely chopped
1 teaspoon ground cumin
1 bay leaf
6 large tomatoes (about 4 1/2 pounds), finely chopped
7 sun-dried tomatoes, preferably oil-packed, chopped
2 tablespoons tomato paste
One 14-ounce can no-salt-added diced or chopped tomatoes
1/2 cup water
1 teaspoon unsweetened pomegranate molasses (optional)
Juice of half a lemon
1/2 teaspoon fine sea salt, plus more as needed
1/2 teaspoon freshly ground black pepper, plus more as needed
DIRECTIONS

For the 7-spice blend: Combine the allspice, cloves, nutmeg, ground fenugreek, ground ginger, pepper and cinnamon in a small bowl or jar and thoroughly mix. The yield is 1 scant cup; reserve 4 teaspoons for this dish and store the rest (for up to 1 month).

For the eggplant and chickpeas: Preheat the oven to 400 degrees. Line two large baking sheets with parchment paper. Have a large, deep baking dish or casserole at hand. Drain the chickpeas.

Whisk together the flour, the 4 teaspoons of 7-spice blend and the salt on a large plate. Dab each side of the eggplant disks in the flour mix so they are lightly coated, discarding whatever flour mix is left. Lay them on the lined baking sheets, drizzle them with the oil and bake until fork-tender, about 20 minutes. Let cool while you make the tomato sauce.

For the sauce: Heat the oil in a large, deep skillet over medium heat. Add the onion and cook, stirring frequently, until it starts to soften, 2 minutes. Add the garlic and cook for 1 minute, then stir in the cumin and bay leaf and cook, continuing to stir frequently, until the cumin is fragrant. Stir in the finely chopped fresh tomatoes and their juices, the sun-dried tomatoes, tomato paste, diced or chopped canned tomatoes, water, pomegranate molasses, if using, the lemon juice, salt and pepper; cook, stirring occasionally, to form a sauce that is thick and rich and has reduced, 30 to 40 minutes. Taste, and add salt and pepper as needed. Turn off the heat, and discard the bay leaf.

To assemble, create a layer of about one-third of the baked eggplant disks in the bottom of the baking dish or casserole. Top with about one-third of the chickpeas and one-third of the sauce. Repeat in two more layers, finishing with the sauce. Bake (uncovered) until bubbling around the edges, about 40 minutes. Let cool slightly, and serve warm or at room temperature.

Sweet potato and kale salad - by Chitra

I want to put out the recipe that I am bringing to Thu's house today:

This is a sweet potato and kale recipe that was fabulous.  I had two bowls after bootcamp and a third for lunch later on.

Ingredients:
2 Tbsp oil
1 inch ginger, finely grated.
2 cups broth or water
5 cups kale - stems removed; chopped into bite-size pieces
pinch of cinnamon
Golden raisins or dried cranberries
1 cup barley or brown rice
2 cups sweet potato diced
up to 1 Tbsp of pomegranate vinegar or maple syrup
1 Tbsp balsamic vinegar
1 cup cooked edamame
Toasted pecans
Feta cheese

Directions:

1) Heat 2 tablespoons of oil in a large skillet. When heated through, add ginger. In about a minute, add 2 cups of finely diced sweet potato, and a pinch of salt and saute for a few minutes.

2) Add broth or water, kale, a pinch of cinnamon, and golden raisins, or cranberries. Cover and cook for several minutes until the sweet potato is cooked through. Add cooked barley or brown rice to it, pomegranate vinegar or maple syrup, balsamic vinegar, and cooked edamamme.

3) Once all the ingredients have combined and heated through, remove from flame and garnish with crushed toasted pecans and feta cheese.

Carrot Cake


Carrot Cake - Thanks to boot camper Pamela Armstrong.


Ingredients:
2 cups all-purpose flour
2 teaspoons baking powder
2 teaspoons baking soda
½ teaspoon salt
2 teaspoons ground cinnamon
2 cups white sugar
4 eggs
1 1/3 cups vegetable oil
4 cups grated carrots (I use a food processor so it has the consistency of purée)
¾ cups walnuts (optional)


Directions:
Preheat oven to 350 degrees.  Grease and flour cake pans. Your choice on layer, sheet or bundt.
Sift together in medium size bowl, the flour, baking powder, baking soda, salt and cinnamon.  Set aside.
In a large blow, mix together the sugar and eggs by hand until thick and pale.  Stir in the oil, then gradually mix in the sifted dry ingredients.  Fold in the carrots and nuts.  Spread evenly into the prepared pans.
Bake for 40 minutes or less (I usually bake for 20-25 mins.)  Check for doneness with toothpick.
When cool frost with your favorite frosting.

Wild Rice Salad with Pecans and Cranberries

Wild Rice Salad with Pecans & Cranberries

Salad Ingredients:
1 cup uncooked wild rice, prepared according the instruction on the box
1 cup pecans, coarsely chopped ( roasted probably better)
1 stalk celery, sliced
1 cup sweetened cranberries
1 red apple, diced  (Gala apple)
zest from 1 lemon

Dressing Ingredients:
3 tablespoons lemon juice (fresh squeezed)
1 tablespoon agave nectar or honey
1 tablespoon olive oil
Some salt and white pepper to taste

Mix salad ingredients together in a bowl except the rice. Pour the dressing into the fruit/celery mixtures, mix. Add rice to the fruit/celery mixture. It tastes better if you let it sit for a while.

Strawberry Avocado Salad/Salsa

Strawberry avocado salad/salsa:

This is from memory:

Fresh strawberries, cut into slices or wedges 1- 2 lbs
Avocado 1-2 , cut into 1 inch pieces
red onion, diced into  small pieces
Jalapeno pepper  1 small, diced into small pieces

Combine all ingredients and sprinkle with 1 TBSP of sugar and sprinkle with a few dashes of salt and then squeeze 1-2 fresh limes over the mixture and toss gently.

Chill for 1-2 hours if possible and then serve with chicken or fish or with chips.

Enjoy!

Noodle Kugel

1 8 oz package cream cheese, softened
1 container (16 oz) cottage cheese
3 eggs lightly beaten
1 stick margarine melted
1 tsp vanilla
1/2 tsp cinnamon
8 oz wide egg noodles cooked and drained
1/2 cup sugar

1.  Mix cream cheese, cottage cheese, sugar and eggs.  Stir in margarine, vanilla and cinnamon.  Gently stir in cooked noodles and pour whole thing into 11x7x2 baking dish (spray with PAM first)
2.  Bake at 350 degrees for 35-40 minutes and let stand for 20 minutes before cutting.
3.  sprinkle with a little cinnamon to make it look nice

Note:  Obviously this is not a boot camp recipe once you look at the ingredients!  We might need a double session of Troy to work it off.  I'm looking forward to getting everyone's recipes, there were so many beautiful creative foods Sunday!

Asparagus Popover

Asparagus Popover

Serve 4.  Prep 15 mins   Bake 20min

1 lb asparagus
2 tablespoons butter
1/2 cup milk
3 large eggs, at room temp
1/2 cup flour
Salt and pepper
Pinch sugar
3 oz gruyere or Swiss Cheese, shredded (1cup loosely packed)

1. Position a rack in the lower third of the oven and preheat to 425 degree. In a medium saucepan, add enough salted water to reach a depth of 2 inches, bring to a boil. Add the asparagus and cook until crisp tender, about 3mins. Drain and rinse with cold water, then pat dry with paper towels. Cut the spears crosswise into thirds.

2. In a medium cast-iron skillet, add the butter. Place the skillet in the oven to melt the butter.

3. In a medium bowl, microwave the milk on high for 30 seconds. Whisk in the eggs, then the flour,1/2 teaspoon salt, 1/2 teaspoon pepper and the sugar.

4. Add the asparagus pieces to the hot cast-iron skillet and pour the batter on top. Sprinkle with half of the cheese and bake until puffed and golden brown, 18 to 20 minutes. Top with the remaining cheese.

AND, if Troy looks away, you may sprinkle cooked bacon into the batter!:-))

Non-fat Flan


Here's a dessert recipe courtesy of bootcamp organizer extraordinaire - Dr. Thu Tran

Non-fat Flan

3eggs
1can fat free condensed milk
1 can fat free evaporated milk
1 cup slim milk
1/2 tsp vanilla
Pinch of salt

Caramel to coat a 9 in.x5 in. Loaf pan:3 heaping tbsp.sugar
2tbsp water
2-3 drops lemon juice

Mix the water,sugar and lemon juice in the loaf pan and, over medium heat make. The caramel moving the loaf pan b ack and forth over the burner so that the mixture has time to cook without burning. WheN the mixture has turned a medium golden brown, coat the loaf pan and set aside to cool.

Combine the flan ingredients and put them in the loaf pan. Place the loaf pan containing the flan in a larger baking dish half filled with water. Place this "double boiler" container in a 350 degree oven for about 45 mins or until an inserted knife comes out clean.

Allow to cool at room temperature. Move a butter knife around the edges before turning it over a serving dish.

Green Papaya and Beef Jerky Salad


INGREDIENTS:

Grated fresh green papaya (bought from Vietnamese market or you can grate your own)
Kirkland (Costco brand) premium Steak Strip beef jerky, cut into thin slices
fresh Thai (cinnamon) basil leaves

Dressing:
soy sauce 1 tbsp
white vinegar 1 tbsp
fish sauce 1 tsp
sugar   1 tbsp
crushed hot pepper with garlic  1 tsp
water  1 tbsp

Mix all dressing ingredients.  Add more of any of these ingredients to your preferred taste.

Top beef jerky slices on green papaya
cut Thai basil leaves into strips on top of beef jerky
Pour dressing on top
Toss and enjoy!

To add spice and heat:  squeeze Spiracha on top!

A great protein-packed, low fat, simple raw salad for the athlete in Boot Camp.

Strawberry Spinach Salad

Contributed by Pam - "This salad is great with other fruit as well.  I often add mango and

blueberries.  I also use balsamic vinegar instead of white vinegar."  

Ingredients

2 tablespoons sesame seeds

1 tablespoon poppy seeds

1/2 cup white sugar (good with 1/4 cup - will continue to try to decrease)

1/2 cup olive oil

1/4 cup distilled white vinegar

1/4 teaspoon paprika

1/4 teaspoon Worcestershire sauce

1 tablespoon minced onion

10 ounces fresh spinach - rinsed, dried and torn into bite-size pieces

1 quart strawberries - cleaned, hulled and sliced

1/4 cup almonds, blanched and slivered


Directions

In a medium bowl, whisk together the sesame seeds, poppy seeds, sugar, olive oil, vinegar, paprika, Worcestershire sauce and onion. Cover, and chill for one hour.

In a large bowl, combine the spinach, strawberries and almonds. Pour dressing over salad, and toss. Refrigerate 10 to 15 minutes before serving.
