Dooboo Jorim (braised tofu)

Spicy and excellent.  Also tried baking the a few slices of tofu in the toaster oven at 400 for ~ 12 minutes with some of the sauce on it - excellent.  Even uncooked tofu, or mushrooms, taste delicious in the sauce.

Have I mentioned how much I love recipes that are absolutely “stupid proof”? You can call it “noobie proof” or “I’m exhausted from work proof” or “I barely know how to boil water proof” too. We’ve all been there: For whatever reason, your brain is on autopilot and, therefore, the recipe better be damn near automated lest you burn your house to the ground. This is one of those rare recipes that practically makes itself but looks and tastes like you slaved over it all day long. I keep it in my arsenal for quick meals and dinner parties alike—it never fails to satisfy. And I’ll bet this may be the first vegan recipe you’ve seen that doesn’t call for extra-firm tofu. This dish celebrates how soft and velvety tofu can be, so play around with medium or firm tofu!

Editor’s note: The Spicy Soy Sauce Dressing will yield more than you need to make the dooboo jorim. Save the extra for another batch of the tofu—keep it in a covered container in the refrigerator for up to a month—or use it as a dipping sauce for dumplings, pour some over cooked vegetables or beans, or spoon it over a bowl of rice.

Ingredients

For the Spicy Soy Sauce Dressing
½ cup soy sauce
1 Tbsp. gochugaru (used  one teaspoon Blue Agave Sriracha) 
2 cloves garlic, minced
1 scallion, chopped
2 Tbsp. finely diced red onion
½ shishito pepper or jalapeño, sliced - used total of one tiny orange pepper
½ Fresno pepper, sliced
1 Tbsp. brown rice syrup or maple syrup
1½ tsp. rice vinegar - only had apple cider vinegar
1½ tsp. mirin
½ tsp. freshly ground black pepper
¼ tsp. ground turmeric
For the tofu
1 (16-ounce) block medium-firm tofu
1 Tbsp. extra-virgin olive oil
3 Tbsp. Spicy Soy Sauce Dressing (from above), plus more for serving
½ cup vegetable broth
1 onion, julienned
1 carrot, finely diced
3 large or 4 small to medium mushrooms, thinly sliced - used LOTS 
2 scallions, chopped
1 Tbsp. toasted sesame seeds

For the Spicy Soy Sauce Dressing

Step 1

In a small bowl, whisk the soy sauce, gochugaru, garlic, scallions, red onion, shishito or jalapeño pepper, Fresno pepper, brown rice syrup, rice vinegar, mirin, black pepper, and turmeric together. You can store it in a covered container in the refrigerator for up to 1 month. Shake well before serving.

For the tofu

Step 2

Slice the block of tofu crosswise into ⅓-inch-thick pieces (I usually end up with 8 to 9 pieces).

Step 3

In a very large skillet, heat the olive oil over medium-high heat. When the oil is hot, place the tofu in the pan in a single layer (you may have to cook in batches if your pan is not large enough) and cook the tofu until the bottom is browned, 7 to 10 minutes. Flip the tofu and repeat until both sides are evenly cooked.

Step 4

Add three tablespoons of the Spicy Soy Dressing and vegetable broth to the pan. Bring to a boil and then reduce the heat to very low. Sprinkle the onion, carrot, and mushrooms over the tofu. Cover the pan and cook until most of the braising liquid has evaporated, 15 to 20 minutes, popping the lid open occasionally and spooning a little bit of the braising liquid over the top of the tofu and vegetables as they cook.

Step 5

Garnish with the scallions and toasted sesame seeds. Serve with additional dressing over the top or on the side.

Easy Vegan Meatloaf

Changed sage to thyme and rosemary, and added a little paprika and a little extra soy sauce and pepper.   Mixture was too much to process at once, so it's best to use half the chickpeas in one batch and half in another in the food processor, then combine and mix by hand.  

Easy Vegan Chickpea Meatloaf 

This family-friendly vegan meatloaf is made with chickpeas, garlic, and flax seeds. Topped with ketchup (or I used Primal Kitchen Classic BBQ sauce, organic unsweetened), it's even better than the classic meat version!  I also used some more of the vegetables - I like the crunch in it!

Easy Vegan Chickpea Meatloaf

Ingredients

Directions

  • Preheat oven to 375 degrees F (190 degrees C). Grease a 9-inch loaf pan with cooking spray.

  • Heat 1 tablespoon oil in a skillet over medium heat; stir in onion. Cook and stir until the onion has softened and turned translucent, about 3 minutes. Add carrots, celery, and garlic; cook and stir until tender, about 4 minutes.

  • Combine remaining 2 tablespoons olive oil, onion mixture, chickpeas, bread crumbs, almond milk, 2 tablespoons ketchup, flaxseed meal, soy sauce, salt, pepper, and sage in the bowl of a food processor. Pulse until just combined; do not overblend. Work in batches if needed. Press mixture into the prepared loaf pan. Brush top with remaining 2 tablespoons ketchup.

  • Bake in the preheated oven until golden, about 45 minutes.

Zippy Yams and Collards

The sweet potatoes overcome the bitterness of the collard greens, and the chili paste and Worcestershire sauce give it a punch.  For company, may want to make it on the spot - it's bright green at first, but dulls as it stands.  Collard greens do shrink, but not as much as spinach! 

"Chili paste, lemon juice, and garlic give this recipe a delightful zip, which is a welcome way to eat nutrient-rich vegetables like yams and collards.  The collard greens in this recipe add calcium, folate and B vitamins."

Ingredients:

1 large bunch collard greens rinsed (~one pound)

1/4 cup water or vegetable broth

1 onion, thinly sliced 

2 large garlic cloves, minced

2-3 small yams or sweet potatoes (peeled if desired), cut into bite-size chunks

1 Tbsp vegetarian Worcestershire sauce

1/2 tsp Thai chili paste

1/4 tsp salt

1/4 tsp ground black pepper

2 Tbsp freshly squeezed lemon juice 

(added a generous sprinkle of fenugreek powder)


Directions:

1) Remove the thick stems and slice the greens crosswise into thin strips.  Set aside.

2) Heat the water in a deep skillet.  Add the onion and garlic and cook and stir until the onion is tender, about 5-10 minutes.  Add the yams, stir and add enough water to cover them.  Cover and cook for 5-10 minutes, until the yams are soft when pierced with a fork.  Remove the lid and simmer uncovered until about half of the water has boiled away.  

3)Stir in the collard greens, Worcestershire sauce and chili paste.  Cook and stir until the collard greens are soft.  Season with salt and pepper to taste.  Sprinkle the lemon over the yams and greens just before serving. 

Stored in a covered container in the refrigerator, leftover Zippy Yams with Collards will keep for up to 3 days. 

Per serving: 77 calories, 0.5 hm fat, 0.1 gm sat fat, 3.3 gm protein, 6.3 gm sugar, 4.4 gm fiber, 83 mg sodium.

Cashew Cream

I haven't been successful with the most basic of recipes - cashew cream.  Soak them, blend them - what could be easier.  But without a Vitamix, it comes out watery and with particles.  


1 cup cashews

warm water just to cover the cashews

1/8  tsp salt or so


For cashew sour cream, add apple cider vinegar and lemon (Rouxbe plants ~ 38 or so) .  Blend very well in VItamix. 



Soak for 2 hours

Blend in the Vitamix, gradually up to level 10.

This was very good! I had some extra veggies in the fridge, so I added a few small white potatoes, a stalk of fennel, a large carrot - all good.  Oh, and I didn't have lentils per se, so I used mung beans, which means lentil!  The lime makes it sOOOO good! 
Meet my favorite recipe for lentil soup! It's warming & delicious, made with tomato, creamy coconut milk, ginger, and a bit of curry.

Ingredients

  • 2 tablespoons coconut oil
  • 1 medium onionchopped
  • 4 garlic clovesminced
  • 3 tablespoons minced ginger
  • 1 tablespoon mild curry powder
  • ¼ teaspoon crushed red pepper flakesmore to taste
  • 1 (28-ounce) can fire roasted diced tomatoes
  • 1 cup dried French green lentilsrinsed and drained
  •  cups water
  • 1 (14-ounce) can full-fat coconut milk
  • ½ teaspoon sea saltmore to taste
  • Freshly ground black pepper
  • ½ cup diced cilantro
  • 2 tablespoons fresh lime juice - stir in at the end - really makes the soup! 
  • Instructions

    • Heat the oil in a large pot over medium heat. Add the onion and a pinch of salt and cook until soft and lightly browned around the edges, 8 to 10 minutes, reducing the heat to low as needed.
    • With the heat on low, add the garlic, ginger, curry powder, and red pepper flakes and cook, stirring, until fragrant, about 2 minutes.
    • Add the tomatoes, lentils, water, coconut milk, ½ teaspoon salt, and several grinds of black pepper. Bring to a boil, cover, and reduce to a simmer, stirring only occasionally, until the lentils are tender, 25 to 35 minutes. If your soup is too thick, stir in 1/2 to 1 cup more water to reach your desired consistency.
    • Stir in the cilantro and lime juice. Season to taste with salt and pepper and serve.

Classic minestrone soup

INGREDIENTS

  • 4 tablespoons extra-virgin olive oil, divided
  • 1 medium yellow onion, chopped
  • 2 medium carrots, peeled and chopped
  • 2 medium ribs celery, chopped
  • 1/4 cup tomato paste
  • 2 cups chopped seasonal vegetables (potatoes, yellow squash, zucchini, butternut squash, green beans or peas all work)
  • 4 cloves garlic, pressed or minced
  • ½ teaspoon dried oregano
  • ½ teaspoon dried thyme
  • 1 large can (28 ounces) diced tomatoes, with their liquid (or 2 small 15-ounce cans)
  • 4 cups (32 ounces) vegetable broth
  • 2 cups water
  • 1 teaspoon fine sea salt
  • 2 bay leaves
  • Pinch of red pepper flakes
  • Freshly ground black pepper
  • 1 cup whole grain orecchiette, elbow or small shell pasta
  • 1 can (15 ounces) Great Northern beans or cannellini beans, rinsed and drained, or 1 1/2 cups cooked beans
  • 2 cups baby spinach, chopped kale or chopped collard greens
  • 2 teaspoons lemon juice
  • Freshly grated Parmesan cheese, for garnishing (optional)

INSTRUCTIONS

  1. Warm 3 tablespoons of the olive oil in a large Dutch oven or stockpot over medium heat. Once the oil is shimmering, add the chopped onion, carrot, celery, tomato paste and a pinch of salt. Cook, stirring often, until the vegetables have softened and the onions are turning translucent, about 7 to 10 minutes.
  2. Add the seasonal vegetables, garlic, oregano and thyme. Cook until fragrant while stirring frequently, about 2 minutes.
  3. Pour in the diced tomatoes and their juices, broth and water. Add the salt, bay leaves and red pepper flakes. Season generously with freshly ground black pepper.
  4. Raise heat to medium-high and bring the mixture to a boil, then partially cover the pot with the lid, leaving about a 1” gap for steam to escape. Reduce heat as necessary to maintain a gentle simmer.
  5. Cook for 15 minutes, then remove the lid and add the pasta, beans and greens. Continue simmering, uncovered, for 20 minutes or until the the pasta is cooked al dente and the greens are tender.
  6. Remove the pot from the heat, then remove the bay leaves. Stir in the lemon juice and remaining tablespoon of olive oil. Taste and season with more salt (I usually add about 1/4 teaspoon more) and pepper until the flavors really sing. Garnish bowls of soup with grated Parmesan, if you’d like.

NOTES

Make it dairy free/vegan: Don’t garnish with Parmesan, or use homemade vegan Parmesan.

Make it gluten free: Substitute your favorite sturdy gluten-free noodle. I used DeLallo’s Whole-Grain Rice Shells and they worked great.

Parmesan note: Most Parmesans are not technically vegetarian (they contain animal rennet), but Whole Foods 365 and BelGioioso brands offer vegetarian Parmesan cheese.

brussels sprouts with medjool dates

I haven't tried this yet, but it looks great!

Serves 4

Ingredients

  • 1 (10-ounce) package shaved Brussels sprouts (see Pro-tip)
  • 2 cups pitted dates, torn into quarters
  • 3 tablespoons grapeseed or safflower oil
  • 1 teaspoon coarse salt
  • 1 teaspoon black pepper
  • 6 cloves garlic, peeled and sliced

Preparation 

  1. Preheat the oven to 400°F. In a 9 x 13-inch baking dish combine the Brussels sprouts and dates with the oil, salt, and pepper. Toss to make sure all the pieces of dates and Brussels sprouts are covered evenly. Sprinkle the garlic on top.
  1. Roast for 20 minutes or until the garlic has caramelized and the dates and Brussels sprouts have browned on top.

Pro-tip: If you cannot find shaved Brussels sprouts, take the Brussels sprout and cut from top to bottom; lay flat and then slice thin shreds as if it were an onion.

Honey mustard vinaigrette dressing

Indian Pearled Barley Pilaf

From the package of pearled barley.  Simple but tasty.


Ingredients: 

olive oil (instead of '1/2 cup butter')

1 onion diced (used red and yellow)

1.5 cups Pearled Barley

1/2 tsp ground all spice

1/4 tsp ground turmeric

1/4 tsp curry powder

also added ~1/4 tsp ground coriander

1/2 tsp salt

3 cups broth

1/4 cup slivered almonds


DIRECTIONS:

1) Heat olive oil in a large skillet.  Cook onion until it is softened

2) Add barley and cook for 5 minutes, then stir in all the spices.

3) Add the broth and simmer with lid closed until barley is tender, about 30 minutes.  Fluff with fork and add almonds.
