I haven't been successful with the most basic of recipes - cashew cream. Soak them, blend them - what could be easier. But without a Vitamix, it comes out watery and with particles.
1 cup cashews
warm water just to cover the cashews
1/8 tsp salt or so
For cashew sour cream, add apple cider vinegar and lemon (Rouxbe plants ~ 38 or so) . Blend very well in VItamix.
Soak for 2 hours
Blend in the Vitamix, gradually up to level 10.
