Ingredients:
1 Tbsp vegetable oil
1 small onion chopped
1 pound of carrots
1 pound of sweet potatoes or green beans
2 Tbsp honey
2 tsp grated fresh ginger (or 1/2 tsp ground)
1 Tbsp minced fresh parsley (optional)
Directions:
1) Heat oil in a medium saucepan. Add onions and carrots. Fry over high heat until onions are beginning to brown, 3-4 minutes. Reduce heat to medium
2) Stir in honey and ginger. Cover and cook, stirring occasionally, until carrots are tender, about 15 minutes.
3) Before serving, garnish with parsley. Serve hot.
